Job Description
Our client seeks a strong Executive Sous Chef for a mixed conference and leisure resort hotel located along the Dolphin Coast of KZN. This person will have the ability and proven track record to manage a team fully and be hands-on in a la carte and banqueting production and service. This is a full-service hotel offering 3 meals per day to its in-house guests plus morning and afternoon tea breaks and snacks for varied conference packages. Standard Sous Chef duties will apply, such as assisting the Head Chef with Stock Control, wastage management and portion control, Kitchen Health and Hygiene, Menu Planning, Cost Controls, Orders and receiving of stock. Managing the correct preparation, production and presentation of meals for service. We are seeking a reliable person who can fill in for the Head Chef when he is on off days. Liaise with Guests, Train, mentor and guide staff, handle complaints and streamline processes to ensure Guest satisfaction and smooth service delivery.
Qualifications
Formal Professional Cookery/Culinary arts Diploma essential. Matric.

Able to take over from the Head Chef as required when he is off shift or on days off. Good problem solving skills and able to use own initiative.
