RedCat Recruitment is seeking an experienced GROUP FRESH MANAGER (FOOD RETAIL INDUSTRY) to for a large retail concern - position based in the Southern Drakensberg area.

REQUIREMENTS
Grade 12.
Code 08 driver’s license / own transport.
Relevant qualifications an added advantage.
Strong computer skills (MS Office, Email / Internet).
Previous management / supervisory experience in a similar position.
Previous food retail experience (Q-PRO/NSF Audits, Retail Operations Checklist, Sigma).
3yrs+ previous working experience in catering.
Production planning.
Range maintenance and expansion.
Ordering.
Stock taking.
Waste management.
Costings – computer capture and verification.
Hygiene compliance (recipe batch control, first in – first out, legislation).
Price maintenance.
Suppliers (compliance, deals).
Staff management (disciplinary code, off-duty scheduling, health & safety).
Understanding GP’s and the target for each department gross and net.
Prepared to work shift work, and public holidays.
