Minimum requirements:
- Be part of a team of 6 x Duty Managers, 5 x Team leaders, and staff complement of x 130.
- Knowledge of Kitchen Operations and be ability to work with the Executive Chef and Kitchen Brigade.
- Beverage – knowledge of wines and beverages
- Basic Stock Control (Food and Beverage)
- Management and Control of OE
- Basic Cost of Sales Food and Beverage
- Restaurant and Bar Management
- Banqueting and Functions experience
- Guest Relations
- Keep to budgets for e.g., staffing
- Continuous staff training
- Legislative Compliance OHSA/LRA/BCEA
- Labour Relations and HR
- Computer literate (Opera/Micros) and competent administration skills
- Food and Beverage Management Certificate/Diploma an added advantage
- 1 to 2 years experience in a similar position (this term is open to negotiation)
- Willing to consider someone straight out of Hotel School on the minimum end of the salary range
