Kitchen Manager

Kitchen Manager with 5 years’ experience is required for an up market, modern and popular Restaurant/Bar venue in the Fourways/Kyalami area of Johannesburg

Responsibilities

• Coordinate the whole kitchen
• Assist in preparation of the specialty dishes, train and coach all BOH staff
• Knowledgeable, experienced on meat cutting, portioning and related tasks
• Recipe conception on speciality dishes
• Ensure that only the best quality food is served to guests at all times
• Look after the food cost, and maintain spot stock checks on high value items, like fish, meat, chicken, cheese.
• Work closely with GM in achieving food cost and margin goals
• Ability to work and order within a set budget
• Manage, train and maintain all kitchen staff in preparation of the food relevant to their position and station
• Coordination with suppliers and maintaining good relationships
• Follow all uniform guidelines
• Remain calm in busy, stressful situations
• Ensure that all products are of the Restaurant requirement quality specifications
• Practice all safety and Hygiene standards by HACCP
• Check and follow up on the prep, daily cleaning & weekly cleaning check lists
• Capture and count all relevant stock counts
• Complete kitchen staff roster as required
• Deal with orders for the BOH
• Receiving and control of stock

Requirements

• MUST have 5 years’ experience as a Kitchen Manager
• MUST have Pilot POS experience
• Grade 12 or equivalent
• Ability to manage all aspects of running BOH operations
• Demonstrate a high level of organization, attention-to-detail and sense-of-urgency
• MS Office experience (e-mail, Word, Excel)
• Salary is dependent on skill set and operational experience
• Maintain a well-groomed appearance
• Able to work long hours
• Able to work in a busy, pressurised Kitchen environment
