Longstanding and landmark lifestyle club in Southern JHB requires the expertise of a Restaurant Manager with a keen eye for detail and exceptional client repoire

JOB DESCRIPTION:

To manage the daily operation of the Restaurant. Always maintain the set standards of food and beverage service at all times.
Responsibilities
  • Provide effective and strong professional leadership and direction to the team
  • Display accountability for the FOH – leading by example at all times, being present and visible, and having a flexible approach based on the demands of the Restaurant
  • Strive for continuous improvement- through constant monitoring of product and service levels
  • Training and development – in consultation with F&B Managers ensure a consistent approach to support, train and develop staff
  • Provide on the job training to staff and Supervisors on a consistent basis striving to improve the standards of service
  • Monitor and manage staff performance closely and discuss any challenges with F&B Manager
  • Be proactive in encouraging team work , co-operation, harmony, productivity and a positive attitude within the working environment
  • Participates in staff interviews, performance appraisals and disciplinary processes as per policy
  • Ensure all equipment, furniture and fittings are in perfect working condition, e.g. menus, condiments, table numbers, cutlery, crockery, glassware etc.; and take appropriate action to remedy if not
  • Propose ideas for menu / beverage items, specials, cocktails, equipment and decor
  • Ensure that clientele are warmly welcomed, assisted with seating if required and given prompt, attentive and unobtrusive service at all times
  • Whenever appropriate  and opportune, ensure that upselling of food and beverage items is undertaken
  • Liaise regarding any complaints and try to resolve and report to  F&B Managers
  • Liaise with sous chef to ensure effective co-operation and communication between front and back of house operations. Constantly monitor the quality and presentation of all food items, liaising with chefs to ensure the same
  • Manage lighting, music and television and accordance with organizational Standards
  • Daily check that barman do their stocktakes and communicate discrepancies with F&B Managers
  • Conduct all stocktakes and equipment inventory with supervisors and F&B Management
  • Check and authorize all internal beverage stock orders, issues and transfers requested by barmen according to policy
  • Manage stock levels of all OE and ensure proper handling and storage at all times
  • Draw up staff rosters and check manning levels are in line with business demands
  • Check all areas of the Restaurant are compliant with Health and Safety requirements
  • Communicate any maintenance needs with Maintenance Manager/F&B Managers
  • Communicate any IT (computer) issues with IT manager/Admin Manager immediately
  • At all times promote and follow legal responsibilities and requirements associated with responsible service of alcohol (ie. service of alcohol to under age persons)
  • Be able to work in any F&B area when requested by management
  • Attend meetings and training sessions as requested
  • Maintain excellent grooming standards at all times
  • Cash up at end of shift according to procedures and sign off Supervisors’ cash ups
  • Sign off duty at shift end and ensure the Restaurant area is tidy and all stock secured
  • Comply with all food and beverage regulations
Relationship
  • Establishes effective employee relations and maintain the highest level of professionalism, ethic and attitude towards all members, guests, heads of department and employees
