A jewel in the Cape Winelands is looking for a SUSHI CHEF for one of their restaurants

POSITION INFO:
Candidate Requirements:

• Matric Certificate
• Culinary Diploma preferred
• 4 years previous experience in a senior chef role
• Experience with Japanese cuisine
• Work experience as a Sushi Chef
• Good knowledge of various sushi types and sushi-rolling techniques
• Own transport with valid driver’s license
• Ability to work fast and accurately
• Leadership and management skills
• Able to work in a team
• Basic computer skills
• Exceptional customer-service skills
• Excellent written & oral communication skills
• Strong organizational skills
• Attention to detail
• Availability to work within opening hours (e.g. evenings, public holidays, weekends)
• Ability to work under pressure
• Creative problem-solving skills
• Manage food stock
• Handle a wide range of ingredients, with attention to detail to fulfil quality standards.

• Creating & preparing a rich sushi menu with various main ingredients and raw fish
• Prepare appetizers, soups and salads that are close to the philosophy of Japanese cuisine
• Manage and lead the kitchen staff in head chef’s absence
• Coordinate with our wait staff to ensure proper cooking, considering special requests and food allergies
• Provides guidance & training to junior kitchen staff members, including but not limited, to line cooking, food preparation and dish plating
• Supervises all food preparation and presentation to ensure quality and restaurant standards
• Oversee and organizes kitchen stock and ingredients, including proper dating and quality assurance
• Improve waste reduction and manage budgetary concerns
• Works with head chef to maintain kitchen organization, staff ability and training opportunities
• Monitor and maintain hygiene and health and safety principles
